Mangaba (Hancornia Speciosa) is a fruit highly appreciated in the Brazilian
Northeastern, a region which concentrates most of the fruit’s domestic production.
Unfortunately, it is extremely perishable, which restricts its consumption and
industrialization. One alternative that has been used to prolong the shelf life of fruits is
the use of edible coatings, especially those containing chitosan, a material that has
proved to be a good barrier to water, CO2 and O2, and in some cases, to have
antimicrobial action. The objective of this study was to develop a mixed coating, based
on cassava starch and chitosan, for the conservation of mangaba. Through central
composite rotational design (CCRD), 9 different formulations of edible coatings were
developed, taking as independent variables the concentrations of cassava starch and
chitosan in the coating. As dependent variables, the following parameters were used:
weight loss, soluble solids, pH, acidity, texture instrumental color (L*, a* and b*), and
the degree of ripeness of the fruit, evaluated by trained judges, through the appearance
and firmness of the mangabas. The fruits were treated with the coatings and stored at
21°C for 10 days. Linear regressions between the storage time and the values of each
parameter-physical, physical-chemistry, instrumental and sensory- allowed to estimate
the rate of changes occurred in the weight, the color, the degree of maturation of the
fruits among others, during the storage of fruits. Response surface methodology applied
to the data revealed that, while cassava starch significantly reduced (p ≤ 0.05) the rate of
change in the color parameter a *, the chitosan significantly reduced (p ≤ 0.05) theloss
weight of fruits. Multivariate analysis of the data using Principal Component Analysis
(PCA) allowed us to observe a negative correlation (p = 0.0108) between the
concentration of chitosan present in the coatings and the 1st component, which was
associated with the rate of changes occurred in the weight, the color parameters (L *, a
*, b *) and the degree of maturation of the fruits (appearance and firmness), indicating
that, at the concentrations studied, the higher the level of addition of chitosan added to
the coating, the smaller the changes suffered by mangabas stored at 21°C in relation to
the mentioned parameters. Additional tests conducted in the optimization region,
confirmed that mangabas treated with 2% of cassava starch and 1.5% chitosan and
stored at 21°C had lower rates of weight loss, color changes (L *, a *; b *) and best
preserved the sensory attributes of appearance and firmness. Mangabas with and
without coating, and stored at 10°C, suffered injury in their appearance, as reported by
the trained judges. Validation studies conducted using both commercial chitosan and
chitosan prepared at the Federal University of Sergipe (UFS), revealed that the two
materials showed similar effect in delaying the ripening of mangabas, increasing the
shelf life of the fruit from 3 to 5 days, and inhibiting the growth of total and fecal
coliforms. None of the coatings prepared with cassava starch (2%) and chitosan (1.5%)
-commercial or UFS- altered the sensory characteristics of the juice produced from the
mangabas studied. Coordenação de Aperfeiçoamento de Pessoal de Nível Superior - CAPES A mangaba (Hancornia Speciosa Gomes) é uma fruta bastante apreciada no Nordeste
do Brasil, região onde se concentra a maior produção nacional. No entanto, trata-se de
fruto extremamente perecível, o que restringe seu consumo e industrialização. Uma
alternativa que tem sido muito utilizada para prolongar a vida de prateleira de frutas é o
uso de coberturas comestíveis, com destaque para aquelas contendo quitosana, material
que têm se revelado boa barreira à água, ao O2 e CO2, além de apresentar, em alguns
casos, ação antimicrobiana. Assim, o objetivo deste trabalho foi desenvolver uma
cobertura mista, à base de fécula de mandioca e quitosana, para a conservação da
mangaba. Através de delineamento composto central rotacional (DCCR), 9 diferentes
formulações de cobertura foram desenvolvidas, tendo-se como variáveis independentes
as concentrações de fécula de mandioca e de quitosana na cobertura. Como variáveis
dependentes foram utilizados os parâmetros: perda de peso, sólidos solúveis, pH,
acidez, textura, parâmetros L*. a* e b* de cor, bem como o grau de maturação dos
frutos, julgados por equipe treinada, através da avaliação da aparência e da firmeza das
mangabas. Os frutos foram tratados com as coberturas e armazenados a 21 °C por 10
dias. Regressões lineares entre o tempo de armazenamento e os valores de cada
parâmetro físico, físico-químico, instrumental e sensorial permitiram estimar a taxa de
alteração da perda de peso, cor, grau de maturação dentre outros, ao longo do
armazenamento dos frutos. Metodologia de Superfície de Resposta aplicada aos dados
revelou que, enquanto a fécula de mandioca reduziu significativamente (p≤ 0,05) a taxa
de alteração do parâmetro de cor a*, a quitosana reduziu significativamente (p≤ 0,05) a
perda de peso dos frutos. A análise multivariada dos dados através de Análise de
Componentes Principais (ACP) permitiu observar uma correlação negativa (p=0,0108)
entre a concentração de quitosana nas coberturas e o 1º componente, associado à perda
de peso, parâmetros de cor (L*, a*, b*), e grau de maturação (aparência e firmeza) dos
frutos; isso indica que, na faixa de concentrações estudadas, quanto maior o nível de
adição de quitosana adicionado às coberturas, menor as alterações sofridas pelas
mangabas armazenadas a 21 °C com relação aos citados parâmetros. Ensaios adicionais
realizados na região de otimização confirmaram que mangabas tratadas com 2% de
fécula de mandioca e 1,5% de quitosana e armazenadas a 21°C apresentaram menores
taxas de perda de peso, de alteração da cor (L*; a*; b*) e conservaram melhor os
atributos sensoriais de aparência e firmeza das mangabas. Mangabas com e sem
cobertura, e armazenadas a 10ºC tiveram sua aparência prejudicada, segundo a
avaliação dos julgadores treinados. Estudos de validação realizados tanto com quitosana
comercial como com quitosana elaborada na Universidade Federal de Sergipe (UFS),
revelaram que os dois materiais apresentaram efeito similar em retardar o
amadurecimento da mangaba, aumentando a vida de prateleira da fruta de 3 para 5 dias,
além de inibirem o crescimento de coliformes totais e termotolerantes. As coberturas
elaboradas com fécula de mandioca (2%) e quitosana (1,5%) -comercial ou da UFS- não
alteraram (p≤ 0,05) as características sensoriais do suco produzido com as mangabas
estudas. São Cristóvão
