Resumen
The consumption in natura of seafood, in Northeast of Brazil, such as prawns, crab and
lobster has increased the agro industrial wastes, such as crab and prawns shells. These shells are discarded in the nature and no value is done for these shells. This work has its principal source os studies these disposal shells. These shells were used, via solid state fermentation, as substrate for production of quitinase, using this substrate which is composed of chitin.
