The purpose of this article is to analyze how institutional changes affected the sugar production curve in Brazil. These changes are punctuated by three events. Innovation in sugar became the most suitable product to handling and transport. The sector deregulation that changes the governance mechanisms of the relationship between the companies in their trade in the sugar market. And the drop in subsidies to European production, which encourages domestic production. The changes brought about by these events are subjected to statistical analysis (hypothesis testing and linear regression). Four hypotheses were tested on changes in sugar production curve in Brazil. The Hypothesis test was used to test the statistical significance growth analysis of the Brazilian sugar production before these events. It is noted that the average sugar production was changed after the institutional changes. The econometric model showed that the slope of the sugar production curve changed after each event, although the development of VHP sugar and the deregulation of the sector have impacted more production than the decline in subsidies in Europe.O objetivo deste artigo é analisar como mudanças institucionais afetaram a curva de produção do açúcar no Brasil. Estas mudanças são pontuadas por três eventos. A inovação no açúcar tornou o produto mais adequado ao manuseio e transporte. A desregulamentação setorial que muda os mecanismos de governança das relações entre as empresas nas suas trocas no mercado de açúcar. E a queda de subsídios à produção europeia, que motiva a produção nacional. As mudanças provocadas por estes eventos são submetidas à análise estatística (teste de hipótese e regressão linear). Foram testadas quatro hipóteses sobre alterações na curva de produção do açúcar no Brasil. O Teste de Hipóteses foi utilizado para comprovar a significância estatística da análise de crescimento da produção brasileira de açúcar diante destes eventos. Verifica-se que a média de produção do açúcar foi alterada após as mudanças institucionais. O modelo econométrico mostrou que a inclinação da curva de produção do açúcar se alterou após cada evento, embora o desenvolvimento do açúcar VHP e a desregulamentação do setor tenham impactado mais a produção do que a queda dos subsídios na Europa.São Cristóvão, SE
