Resumen
The relationship from men with food is something inherent to his nature, as well
as his contact with the food resources made available by it for his needs. The rural
environment offers the possibility of vegetable gardens and orchards, which have a double
function when it comes to promoting Food and Nutritional Security: food diversification
and income generation. The present study sought to collect and gather information on the
main Non-Conventional Food Plants (PANC) that can be used and cultivated in a rural
environment. Data from the perspective of the subject in Brazil and in rural environments
were collected, as well as information on nutritional characteristics, cultivation and
culinary use, which were then synthesized and organized in the form of a digital book.
Were included in the book some PANC like Caruru (A. hybridus and A. viridis), Major 18 gomes (Talinum, paniculatum), Ora-pro-nóbis (Pereskia aculeata) and Peixinho da Horta
(Stachys byzantina). The dissemination of information about PANC can encourage the
cultivation and use of these plants in rural areas, and classifieds can recognize them in
their natural environment, as a way to strengthen food security, rescue assets and diversify
food consumption of the population.
