Hospital malnutrition is a public health problem and is linked to the significant
increase in patients' morbidity and mortality. The offer of quality food helps to
increase the food intake of these patients as well as minimizing the risk of
waste. The measurement of the rest ingestion serves as an instrument for the
control of waste and costs and as an indicator of meal quality, helping to define
the profile of diners and the acceptance of the menu offered. Thus, this study
aimed to assess the rate of rest ingestion of patients at a hospital in the
northwest of Rio Grande do Sul. To perform the rest-intake index, the three
types of dishes used were weighed before and after being served. After the
patients had eaten, the edible remains were weighed again. The results show
that the general average of rest-intake per capita was 125.7 g, representing an
average of 24.58%. In the comparison between the three containers used, the
thermal trays showed a residue index of 23%, while the glass and stainlesssteel
dishes had a rest-intake rate of 80% and 74%, respectively. It was possible to
notice that the data of the comparison between the remains of the patients
hospitalized in the public network and in the private network suggest that there
is no pattern of rejection of a specific type of insurance.
