Resumen
Synthesis of lactose-derived prebiotics,
namely galacto-oligosaccharides (GOS),
fructosyl-galacto-oligisaccharides (fGOS) and
lactulose, with β-galactosidases (Figure 1) is
technologically and environmentally relevant.
High yield, productivity and specificity are
attainable, and the process complies with green
chemistry guidelines. Lactose is less water
soluble than other sugars and oligosaccharide
synthesis requires a high substrate
concentration, so thermostable β-galactosidases
are attractive catalysts.
v The purpose of this work was the identification,
cloning, heterologous expression and
characterization of a β-galactosidase from
Exiguobacterium acetylicum, which is a barely
studied thermotolerant bacillus whose β-
