Resumen
This work applies the theory of systems and principles of circular economy as a methodology for the management of waste generated in the restaurants of the Universidad Santo Tomás Seccional.
The investigation was carried out at the Bucaramanga, Florida and Piedecuesta Campuses, observing shortcomings that exist in a notorious way in the restaurants when it comes to the management of solid and liquid waste.
Information was collected through surveys directed at students, administrative staff and restaurant employees, necessary to propose prevention strategies and proper waste management.
To assess the environmental impacts generated by the activities carried out by the restaurants, the Conesa methodology was applied.
For usable organic waste, composting plants were designed for Campuses that have restaurants,
thus applying circular economy principles.
