Abstract

The first alcoholic distillates made from fermented must of agricultural inputs were marketed as therapeutic and medicinal products. Currently, distillates such as cachaça, Vodka and Gin are known and consumed worldwide for their historical, economic, and cultural relevance. The Brazilian trade of this kind of beverage, in recent years, grown gradually due to the emergence of a new class of consumers in this market segment. Thus, the present work proposes the development of the project of a medium­sized industry to produce alcoholic spirits, called Aqua Vitae, which will be installed in the municipality of Cambará ­ PR, to take advantage of the gap of opportunities generated by new consumption habits and the search for a line of highquality beverages, which value the tradition, personalized and unique aromas, and flavors. The industry project will occupy a planned area of 2 bushels, with the purpose of annually commercializing 6.5 million liters of distilled beverages, betting on innovation, quality, and purity, with the production of silver and gold cachaça, Vodka and Gin, obtained from the distillation of fermented sugarcane must. Thus, this work will present the Aqua Vitae distillery, together with its market study, consumption projections, the company's locational decision, material and energy balance sheets related to the production process, equipment specifications, energy integration and financial analysis, which proved to be a viable enterprise with highly profitable potential, having payback from the 4th year of operation.
