This research entitled “Proposal for the Preparation of Ice Cream Recipes Based in Five Ecuadorian Craft Cheese” aims at introducing Ecuadorian craft cheese as an innovative and interesting ingredient in the ice-cream industry. The ice-cream will be based in the craft cheeses most popular and recognized of the Ecuadorian society, such as: (i.e. fresh cheese, cottage, “queso de hoja” (cheese wrapped in a special leaf for ripening), “quesillo” or soft cheese, and crumbling cheese), that with the application of the technique of preparation of craft gelato, give us the opportunity to obtain a delicious product which will be a novelty in the ice cream market.
The ice-cream will be made with fresh products of the highest quality, and with applying the English Cream technique, we will have a better combination of the Ecuadorian craft cheeses, and the selected flavors which count the ice-cream, such as: figs in honey, coffee and praline of tocte (type of dried fruit), verbena, chocolate, sweet tree tomato, sweet red fruits, caramel with amaranthus, guava, among others; obtaining as final result a recipe book with new gastronomic ideas to help the development of the ice-cream industry of the country.
