Enzymatic synthesis of lactulose with β galactosidase is still a scarcely
explored field and most reported yields are low For this reason, new
strategies are required for lactulose synthesis allowing an increase in
selectivity, yield and productivity
Enzyme immobilization usually produces a significant increase in
operational stability and allows catalyst recovery, being in many cases the
key for making enzymatic processes technologically and economically
viable Cross linked aggregates of precipitated β galactosidase CLAGs
belong to a new generation of biocatalysts not requiring an inert matrix,
offering many economic and environmental benefits in the context of
industrial biocatalysis, namely, a very high mass specific activity, simple
production and low cost, being active and stable in non conventional
(non aqueous) media, and having acceptable mechanical properties
