dc.description.abstract | To meet industry specifications, regulations, and customer requirements in a safe manner while providing quality products, companies seek to strengthen themselves by combining all these requirements. In view of this, this study developed a Good Manufacturing Practices manual for a bakery, standardizing certain procedures and complying with applicable regulations for this establishment. The research was conducted in several stages, including monitoring the production process, applying a checklist to map existing good practices, conducting interviews with employees and managers, developing the Good Manufacturing Practices manual, and describing standard operating procedures for certain activities. The result was a clearly and objectively described manual with all the necessary information for the company, as well as the standardization of two procedures that are mandatory requirements according to the legislation for this industry. The documents were received positively and found useful by the company, thereby increasing its credibility with customers and employees, as they adhere to a standard of quality and continuous improvement in their processes | |
