dc.description.abstract | Hospitality and commensality are factors that are constantly growing. Hospitality is like a
gift, given by the one who gives it without expecting anything in return. Commensality is the
act of eating together, as a demonstration of solidarity and collectivity, it is linked to our
essence, it is through food that we know the history of a place. Tourism and such concepts are
items that have a direct connection between them, and since ancient times they have been
present in people's daily lives. Therefore, the quality of hospitality and commensality in the
hotel industry are extremely important agents, considering that it is essential to have a good
stay in addition to quality food, as they are essential for the satisfaction of tourists during the
trip. This study deals with hospitality and commensality at the Hotel Appel de Santa Maria,
seeking to understand whether such concepts are important for the hotel, from the perspective
of guests, employees, as well as the view that the author will have, through her participant
research. The methodological procedures were developed from a bibliographical research,
qualitative research, quantitative research, field research and participant research, as a
research technique, face-to-face questionnaires were used, as well as online through the
Google Forms platform, obtaining 101 responses, face-to-face questionnaires for the
collaborators got 16 responses, and in the participant survey they participated in a dinner and
a hotel stay. The survey results showed that hospitality and dining have great importance for
Hotel Appel, such concepts are seen as factors that bring benefits to its functionality, from the
point of view of the guests, the collaborators, as well as the author, through her participatory
research. Finally, it is believed that future research will be able to analyze hospitality and
commensality more deeply, considering such concepts are of great importance for the hotel
