General acceptability and caffeine quantification of an energy drink with residual coffee pulp.

Resumen
Objetivo: El presente trabajo de investigación tiene como objetivo evaluar la cantidad de cafeína y el nivel de aceptabilidad de una bebida energizante elaborada con pulpa residual de café. Materiales y métodos: El estudio es transversal, prospectivo y analítico. Se elaboraron tres formulaciones de diferentes concentraciones: formulación 1 (pulpa de café 40%), una formulación 2 (pulpa de café 60%) y una formulación 3 (pulpa de café 80%). Se aplicó una prueba sensorial de tipo hedónica que permitió determinar las características de olor, color, sabor, aspecto y aceptabilidad, en 100 personas adultas
de ambos sexos del distrito de Villa el Salvador. Resultados: La formulación que contiene pulpa de café al 40% presenta la mayor aceptabilidad en todos los atributos, mientras que el contenido de cafeína se determinó a través del método de AOAC y fue de 41.2 mg en
100mL de muestra. Conclusiones: Mediante la prueba sensorial se concluyó que existen diferencias entre las 3 formulaciones, la cual la formulación 1 tuvo mejor aceptabilidad por parte de los panelistas.
