Resumen
The present work proposes a pre-feasibility study of a hot pepper dehydration plant in the CAPSICUM San José producer association located in the east of the department of Antioquia. This study is going to be carried out to take advantage of a business opportunity and solve a problem in the loss of fruit that occurs in the post-harvest phase. The association currently produces and markets fresh chili to national markets and is projected to international markets, taking measures
for certification and thus proceeding to export this product.
In the post-harvest, a percentage of the fruit remains that does not meet the quality standards for the markets to be marketed, since it is ending up in the association's Composter, with the pre-feasibility study, it is intended to use all the fruit, dehydrate it and potentiate a new product of the association with an added value that allows it to penetrate or explore new markets.
With the completion of the pre-feasibility study, several relevant aspects of the sector and the market are analyzed, as well as the technical requirements of the product, the current market, its demand and supply, the organizational part with its structure and of course the financial aspects that we It will help define if the investment in said project is viable.
