Resumen
Se evaluó la calidad microbiológica de 38 muestras de chorizo artesanal por duplicado, procedentes de los mercados 2 de Mayo, Central, Grau, Natividad, Leguía y Leoncio Prado del distrito de Tacna. Evaluando el recuento de microorganismos aerobios mesófilos viables, mediante la técnica de recuento en placa, Escherichia coli y Staphylococcus aureus mediante los métodos oficiales de la AOAC utilizando placas Petrifilm™. Concluyendo que un 31,6 % del total de muestras no cumplen con los parámetros de calidad microbiológica establecidas en la R.M. 591- 2008-MINSA y solo el 68,4 % son aptas para su consumo y comercialización. Así mismo, se hallaron del total de las muestras para microorganismos aerobios mesófilos viables, Escherichia coli y Staphylococcus aureus; un 6,3 %, 26,7 % y 7,9 % respectivamente, que no cumplen con los parámetros de calidad microbiológica establecidos por la normatividad.
