Optimización de extracción de teobromina asistida por ultrasonido a partir de residuos de la industria de cacao (Theobroma cacao)

En el presente trabajo de investigación se realizó la extracción asistida por ultrasonido(EAU) de teobromina de cascarilla de cacao variedad criolla del departamento de Junín con el objetivo de optimizar parámetros mediante la metodología de superficie respuesta(MSR). Se usó variables que fueron determinados por el programa Design Expert 11, que nos dió 18 tratamientos para extraer teobromina con valores de amplitud (80-100 %), tiempo (10 – 30 min) y concentración de solvente etanol-agua (40-60 %), las cuales se corroboran con el cromatógrafo liquido de alta presión (HPLC) para posteriormente determinar sus características antioxidantes expresadas en IC50, así como también su actividad antiobesidad mediante la inhibición a la lipasa pancreática. El software nos maximiza la superficie repuesta, resultando que el mejor tratamiento es dado por la combinación de parámetros amplitud 80%, el tiempo de extracción fue 30 minutos y proporción de etanol-agua del 40% lo que da una cuantificación de 0.32915 mg/g (329.15 ppm) de teobromina como componente fundamental de la cascarilla de cacao, también se encontró un 0.157507mg/g (157.507 ppm) de cafeína. Posteriormente se hizo la actividad antiobesidad, resultando un 81% de inhibición de la lipasa frente a un 91% de inhibición del orlistat, su inhibidor por excelencia.
