The present work is to contribute to the research area related to health and safety of Food Trucks workers, which is few studied and has rare bibliographic productions. Therefore, the objectives of this research are to identify and evaluate the risks that the workers are exposed in the activities execution of a Food Truck, specifically in a vehicle adapted for the confection and sale of churros, through Preliminary Risk Analyzes (PRA's), classifying them as trivial, tolerable, moderate, relevant or intolerable according to their severity degree and occurrence frequency. The visits and data collection were realized in August and September 2017, where were identified the ergonomic, physical and accident risks. In case of occurrence, the risk classified with the maximum degree of severity (5) is the accident due to collision and / or overturning in the intercity commuting of the vehicle, which even with the application of the recommendations does not change its classification as a risk relevant, however, decreases its probability of occurrence. The ergonomic risks were those that presented the maximum frequency degree (5), where the loading of overweight goods and delivery of the product to the customer were classified as moderate, that is, it is important to apply the corrective actions in the short term, aiming at the reduction of risk exposure. The ergonomic risk was classified as relevant in the case of the repetitive effort in the operation of the candy machines, and the immediate application of the corrective actions was necessary in order to reduce its degree of severity. The application of the APR’s proved to be effective, acting to improve the health and safety of workers through the identification, classification and recommendations described in order to eliminate or minimize the risks present in the execution of the activities.
