Coffee is the main Brazilian export product, giving Brazil the title of the largest coffee exporter in the world. The Brazilian is also the second largest consumer of coffee in the world. Almost all coffee available in the market is divided into two categories: Arabica (Coffea arabica L.) and robusta / connilon coffee (Coffea canéfora L.). This work aimed to identify fraud in commercial coffee using chemometrics applied in image analysis, RGB standard (Red, green, blue). Pure high and low quality coffees and their mixtures (tampering) were photographed and their RGB standard color channels were extracted into the ChemoStatV2 software. The gray tones of the RGB standard were used for statistical analyzes. Two types of complementary multivariate analyzes were used. Principal Component Analysis (PCA) and Hierarchical Grouping Analysis (HCA). With the results of the principal component analyzes and the cluster analyzes, it was possible to define the groups of coffee that most resemble each other and to compare them with coffee considered standard (IND A). Pure and adulterated coffees have a characteristic color pattern that can be detected by chemometrics.
