Resumen
The automation of the main processes of craft beer production is a possible measure to ensure high quality products and competitiveness in the market, enabling professional brewers to craft a product with quality control, efficiency, and competitive cost. The present work details the implementation of a model plant for the automation of mashing, filtering and boiling processes to the brewery Floresta. For this purpose, after a review of existing solutions in the market, an analysis was performed to assess which is the best solution to be applied to the brewery Floresta, giving priority to the analysis of operational aspects, maintenance and deployment costs. It was concluded that, for the discussed case, the use of a programmable logic controller with a supervisory system presents more advantages in comparison with other systems. For mounting the plant model, only one recipe was programmed, which can be controlled by both control panel and supervisory system, wherein the latter underwent tests of communication and operation of the equipment.
