Resumen
Essential oils are extracts obtained from aromatic plants and in cases have properties such as anti-inflammatory activity and inhibitory proliferation of bactéria, the essential oils are contained in a number of products from various industry sectors, ranging from preservatives to flavorings. However, there are not many studies about the degradation profile and toxicity of the degradation products of these molecules since the laws in force in the related areas do not require elaboration of stability studies. In this context the objective of this study was to determine the in silico toxicity of degradation products obtained by photolytic stress of marjoram essential oil in order to demonstrate the importance of monitoring certain degradation products that have structural alerts to mutagenicity, carcinogenicity and acute toxicity.
