Soybeans are considered the most competitive oilseed in the world´s agroindustrial market, and Brazil is among the largest producers of this grain. The present work aims to present a discussion on the most recent studies that point to a more noble application of soy protein, such as regeneration of epithelial tissues, wound dressings
and blankets to encapsulate medicines, which are of great relevance in the scope of medicine, since it has characteristics of biodegradability and biocompatibility. It was found that temperatures around 60 ° C for 20 minute periods had a better yield and efficiency in the extraction process, without loss of protein content caused by denaturation at temperatures above 80 ° C. The increase in salt concentration has been shown to increase the ionic strength of the aqueous solution, correlated with the insolubility of soy protein at the isoelectric point, resulting in the precipitation of the soy protein isolate. For electrospinning processing, higher concentrations of soy protein isolate mixed with PEO, the formation of a stable solution was observed, with a marked improvement in the mechanical properties of the fibers. PU and PVA, also showed good advantages in mixtures with soy protein isolate.
