The present study aimed to investigate the dietary habits and physical activity before and after educational intervention on servers at a public university in the state of Parana. There was a collection of data covering a sample of 36 servers Federal Technological University of Paraná - Campus Ponta Grossa, of both sexes, provided spontaneous. Variables analyzed: age, sex, dietary patterns, anthropometric data, blood fat levels and glucose levels. Each participant went through individual interviews, in order to carry out dietary anamnesis, evaluation of exercise and anthropometric examination. The results were analyzed statistically and qualitatively, based on exploratory descriptive analysis mean comparison between the results obtained. We observed an improvement in the standard food after an educational intervention, particularly in relation to consumption of fruits and vegetables, which was close to the recommended daily pattern. Furthermore, for physical activity, initially most of the servers were inactive. After the intervention of the study, a significant increase of the index servers physically active. It is concluded that the interventions in eating habits and physical activity led to significant decrease in the high cardiovascular risk of 18% to 0.6% of the servers.
