Abstract
Resulting from modern life, people change their eating habits and makes meals like "fast food" become increasingly frequent. Among the local practical, bakeries, have an increasing role in outbreaks of foodborne illness. In addition there are several sources of food contamination; there are several factors that contribute to increase the likelihood of such contamination. The handler hygiene and all that comes in contact with food must be very rigid and is of extreme importance to safe and innocuous end product. This study aimed to analyze the microbiological conditions, hygienic and sanitary from a bakery in the town of Missal-PR. Microbiological evaluation of homemade cream showed satisfactory results, all results were within the law required the evaluation of handlers, utensils and equipment, and the environment was not as satisfactory as there are items that do not meet the requirements of legislation used. The deficiency in hygiene poses a health risk to consumers.
