Coffee (Coffea arabica L.) belongs to the genus Coffea of the family Rubiaceae is the seed of the ripe fruit benefited from major crop species are Coffea arabica, Coffea canephora and Coffea robusta. Drinking coffee, one of the most consumed in the world, is a product with natural flavor and aroma, and its market value has grown over the years. The aim of this study was to assess the quality of drinking different brands of coffee, through physico-chemical and sensory. Analyzes were performed sensory and physicochemical (pH, titratable acidity, density, color and sensory analysis) of four brands of cafes in the city of Ponta Grossa-PR. There are not specific regulations for checking the coffee quality. We concluded that the coffee samples analyzed are standard. The physicochemical and sensory analyzes did not differ significantly at level of 1% and 5%.
