Resumen
The fast-food are food that, increasingly gain space in the lives of people. They are mainly consumed by children and adolescents, but has proven to be a preference for adults too. The fast-food are characterized by being rich in fat and for lying pleasant to eat. If ingested frequently, may contribute to the emergence of several diseases related to obesity such as diabetes, cardiovascular disease, osteoporosis, hypertension, among others. Fast-food such as the X-salada is widely consumed by the population principally due to its practicality and afford price. The aim of this study was to determine by physical-chemical parameters, the nutritional and caloric value of fast-food type X-salada snacks marketed in the city of Francisco Beltrão - PR. The results showed differences in the weigh and diameter of the X-saladas analised. The physical-chemistry results presented a variation in the samples and different collections. It can be seen also that the X-salada are good source of carbohydrates and it hasn´t relevant quantities of proteins and lipids. It showed high caloric value and have a large quantity of chloride.
