El presente trabajo de investigación se realizó con el objetivo de determinar y comparar el contenido de hierro, proteínas y oxalato de calcio en las hojas de cinco cultivares de Chenopodium quinoa Willd para consumo directo en el inicio de la fase de panojamiento. El experimento se llevó a cabo en el Distrito El Porvenir, Provincia de Trujillo, Región La Libertad, entre julio del 2015 hasta setiembre del 2015. Para este trabajo se utilizaron cinco cultivares de quinua: Salcedo INIA, INIA 420- Negra Collana, INIA 415- Pasankalla, INIA 427- Amarilla Sacaca y Roja criolla.
El diseño empleado fue completamente al azar (DCA), considerando cada cultivar como tratamiento con cuatro repeticiones. Las evaluaciones para determinar el contenido de hierro, proteínas y oxalato de calcio se realizó después de la cosecha de las hojas, el contenido de proteínas se cuantifico mediante la Determinación de contenido de nitrógeno total por el método de Kjeldahl, el hierro por el método de Espectrofotometría de Absorción Atómica y el oxalato de calcio mediante la Determinación Gravimétrica de calcio como oxalato de calcio monohidratado.
No se encontraron diferencias significativas entre los cultivares, el valor promedio para el contenido de hierro fue de 3.25 mg de hierro/100g MS, el porcentaje promedio de proteínas en las hojas fue 34.98% y el valor promedio para el contenido de oxalato de calcio fue de 704.25 mg/100g MF
