This present monograph is created with the purpose to get a manual about the equipment and implementation in artisanal bakeries which will serve as a guideeither you create both as to reshape local bakery devoted exclusively to, This research is based on several studies conducted in the bakeries in the city of Cuenca, Ecuador, letting us know the current status of Cuenca´s bakeries and existing need for a practical guide which is given to the essential elements such as installations, equipments, and utensils needed to equip an artisanal bakery.
Through the chapters will be announced certain aspects related to the bakery in the city, starting from the origin of wheat, and so knowing, the history of the bread in Cuenca, crossing by the various changes that have taken bakeries along more than two centuries of historyending with the industrialization of bread, and hence the almost immediate disappearance of old bakeries.Also, this research will present the main qualities necessary to equip an artisan bakery, such as infrastructure recommended, and maintenance of installations, as well as the correct handling installations of electricity, water and gas, and finally the definition of artisan bakeries areas, through a scale plan.
