In Ecuador, foodborne diseases are a major health problem. The objective of this study was to determine the microbial load, pH, acidity and Brix juice expended in public spaces in the city of Cuenca, due to the need by the municipal authorities of knowing the quality of the product.
For the analysis a sampling was carried out according to the municipal registry and the mapping carried out in the city, being analyzed in the period of December 2017-January of the 2018 a total of 40 samples of juices, 26 of orange and 14 of coconut in 17 posts of peddling. Microbiological results for both types of juices showed contamination with microorganisms such as Escherichia coli, molds and yeasts. The presence of Salmonella was not found.
Qualitative results showed that both types of juices met the limits specified in the standards for pH and acidity; not for soluble solids. For the acidity of coconut juices were established ranges due to lack of studies that indicate the limits.
In conclusion, we were able to demonstrate that many of the juices that are sold in the public spaces of the city of Cuenca do not comply with the parameters of hygiene and quality. For this reason, in order to preserve the health of the population and as part of the work of qualification, in conjunction with the Department of Urban Control of the Municipal GAD, offered to sellers training on proper food handling pretending to improve its quality
