Resumen
This research aims to develop a gastronomic record considering that is a compilation of ancestral knowledge of traditional sweets Historic Centre of Quito, a gastronomic record was developed by identifying, researching and documenting the information, taking into account the characteristics of a bibliographic, descriptive, and cross- sectional non-experimental research. The information was received using the interview as an instrument, which was directed towards the 8 different owners of the establishments in the Historic Centre, who are responsible for the making of the different traditional sweets. A4 sheets record the National Institute of Cultural Heritage (INPC) were filled, where information was recorded with location data, reference photography, identification data, history, ingredients, preparation, partners, annexes, control data and also filled on the importance to the community so that traditional sweets from the Historical Center remain reflected in memory and at the same time reflected on sheets which were reviewed and approved by Ing. Edison Solórzano principal (INPC). The gastronomic record will contribute to the gastronomic identity and cultural enrichment of the Historic Centre of Quito resulting in feasibility of tourism movement and of those who manage the traditional sweets.
