Resumen
“Design and Implementation of a Sanitary Management plan in the Production Area of Mercado Central of Penipe, Chimborazo Province”
The Gastronomy school in the Public Health Faculty of Escuela Superior Politecnica de Chimborazo developed a research to analize the conditions on sanitary management in Mercado Central of Penipe. Mercado Central needs a right management in the production area. Vendors also need a guide written in a clear, concise, and detailed way of how to handle the food.
The objectives area the following:
1.- To detail the socio-demographic characteristics of the meals vendors.
2.- To analize and determine the sanitation and food preparation.
3.-To develop the sanitary management plan for the food production area in Mercado Central.
The methodology is descriptive; the research used direct observation techniques and surveys. The research’s design was a non experimental.
Results determine a staff that works in the kitchen area for 20 to 40 years with a great experience on food acquisition, storage and preparation. The research motivated training for the vendors, so they can sell quality and aseptic products.
The research found that vendors don´t achieve the sanitary norms and the researchers recommend the present plan be practiced. The authorities should support constant training programs.
