Resumen
This project aimed to investigate the cultural, tourist and gastronomic identity from the Mocha Canton, through cooking methods and cooking techniques, showing by means of a recipe the traditional cuisine of this place which is located at 23 km from the Ambato city in the south side of Tungurahua Province. The recipe book includes 16 preparations which are classified in snacks, appetizers, entrees, soups, rich and extra dishes, which are in a simple format that facilitates the way dishes from people who want to develop these feasible gastronomic delights; generating a theoretical contribution about the cuisine in the Canton. With 50% of consumer preference it offers: papas con cuero, papas con cuy, which uses the method of cooking charcoal for its production. Besides there are the carnival, all souls and their traditional festivities these are attracted for their fighting bulls. The information was obtained through surveys applied to the establishment”s owners and dining observation sheets. With this study it was possible to develop a recipe book of traditional dishes from Mocha Canton with their ingredients, preparation and history of each one; also suggested advertising through the webside of (DAG) Descentralized Autonomous Municipal Government of Mocha Canton, promoting in national and international level this beautiful place with its extensive gastronomic, cultural and tourist variety.
