Resumen
Records of the Intangible Cultural Heritage Culinary of Chambo town Province of Chimborazo, as proposed cultural diffusion provides information that allows rescue the traditional cuisine. A survey was applied to a sample of 387 people where the variables food traditions, customs, dishes, festivities, the results obtained were measured it was determined that 40% of those surveyed know the meaning of traditional Intangible Cultural Heritage Dining mainly because it has not truthful records of gastronomy that has Chambo town; 45% was established to regulate the information offered by the authorities on the benefits that brings the cuisine Traditional; 71% of the population said that this research is very necessary for the development and strengthening of the tourism sector in the town. It is important that government agencies like the NCPI though campaigns and training get the population able to identify and correctly distinguish the ”typical” terms of the “traditional” was is likely to deliver the in habitants of Chambo town a basic notion of gastronomic preparations are considered Gastronomic Intangible Cultural Heritage as the sole purpose of conserving and preserving culinary cultures specific to their fields.
