Resumen
In the present investigation, the Technical Management of the Food Service for the Qhapaq Ñan Ecotourism Route in the Achupallas - Ingapirca section was designed in the 2011 period. To determine the socio-demographic characteristics and food preferences of the tourists, surveys were carried out to different workers of 5 operators. tourists that offer this route, at the same time the characteristics of the services provided in this route were diagnosed. The field research was carried out that allowed us to know the type of tourist that most visits this route, and at the same time to know the food shortcomings that are presented. In relation to food, the guides pointed out that within the menu they do not prepare products from the area, and that the ingredients they transport for the different preparations are made in unsuitable containers, the same ones that were analyzed and interpreted through the surveys. answers, improvements were proposed that will make it possible to provide a food quality service suitable for consumption in this type of route. This technical feeding management will improve the performance of tourists energetically and in this way it will be possible to fulfill the activities planned by the hosts.
