Resumen
The present work was carried out in the main markets of the city of Riobamba in the province of Chimborazo. The experimental results that were obtained were subjected to the following statistical analyses: mean, standard deviation. Most users of the fairs held in different markets, said they have not received training in breeding rabbits, from whom most are traders and end consumers, with high participation of wholesale and retail traders. In the commercialization systems in these markets generally, customers do not matter about the genetic of the animals that they buy or sell, from which prevail the category of improved and creoles (pure or mestizo breeds), since they are acquired for family consumption, as well as to keep them as pets, resell them in the same market or in the different markets of the Riobamba Canton. There is greater preference for buying and selling live animals (10 - 100% of the surveyed), so they prefer to sell them in the market and 10% sell them to grills, restaurants or keep animals as pets. The weights of the animals for consumption vary from 3.00 - 3.40 kg; and the weight of the animals for breeding stock are between 1.10 - 1.80 kg. Regarding the industrialization of rabbit meat 74.3% of traders and final consumers do not know this process while 25.7% said they do know some industrialized products of the rabbit such as sausage, mortadella, among others, but that these products are not available in the local market,
