Resumen
This research propases: The development of a gastronomical proposal for the elderly nursing home of San Pedro de Alausí, Province of Chimborazo , the study was descriptive , cross-sectional , not experimental design, the study population had a total of 32 seniors, an interview and a survey were applied to administrative staff and kitchen area, preparations containing gastronomical optimal for consumption , considering food that was available and recommended , for the elderly and to stimulate appetite and facilitate digestion. 53 % were aged between 65-75 years, 94 % had no pathologies , which is strength for menu planning and provides the possibility of offering different textures in the preparations . The menus are made empirically , the liquidmedium was cooking method most used in food preparation. The most used temperature as 40 to 45 C. This study contributes gastronomical with suitable preparations to feeding the elderly Nursing Home of San Pedro de Alausí with a variety, texture and flavor with safety and nutritional value. The offered recipes include soups and creams, entrees , desserts and juices in standard recipes, cooking methods and optimal techniques and minimal cost.
