Resumen
The aim of the present work was to design the gastronomic route for Santiago de Píllaro canton to
promote its gastronomic tourist attractions. The Instituto Nacional de Patrimonio Cultural’s typical
and traditional food inventory form A4 for Knowledge and Nature-Related Uses was employed for
data collection. The MINTUR form for data collection on Ecuador’s tourist attractions was also
applied. The culinary tourist attractions identified were posted on the official Píllaro GADM web
page. The ethnographic research was developed under a mix methods approach, which includes both
quantitative and qualitative methods. The sample size; tourists that visit the canton, was determined
from information obtained in the canton’s GAD. Questionnaire surveys, interviews and direct
observation were the methods employed to better understand the problem and to determine the
project’s feasibility. The project included the data collected using 29 INPC forms for the gastronomic
inventory, 1 MINTUR form for the data on Ecuador’s tourist attractions and the promotion of the
final product advertised with the name “Recorrido de Sabores” on the Píllaro GADM web page and
a magazine handed out to visitors. The magazine includes the following information: location,
services and dishes offered by each food shop. The results of this work assists with the improving
awareness of the gastronomic richness of the canton, motivate participation of local people and
visitors alike, fostering tourism and gastronomy.
