Resumen
The purpose of this research project was to rescue ancestral preparations and disseminate a digital magazine together with the Decentralized Autonomous Government of Canton El Tambo, through the municipality's website. Ethnography is the gastronomic study of different ancestral foods, it was carried out by interviewing people with age range who approach the era, and through them it was possible to collect different types of information, as well as foods from the time of the colony, like: barley rice, potato, corn, cháhuar miski, chicha, and oca. Milk, club, squash and machica. Through the questioning applied to people with ancestral knowledge in culinary preparations typical of the area, sociocultural appropriation factors could be collected and analyzed against the ancestral gastronomic knowledge in the community of Cachi, the study establishes that there is a recognition of various traditions that they configure the gastronomic space in the mentioned community. Through a survey it was concluded that the mentioned foods are combined for daily consumption; the foods consumed are: chicha de jora, which is a combination of corn and panela, sweet goose that is a combination of milk and goose, barley rice soup that is a combination of barley and potato rice. And so an infinity of combinations of ancestral foods. The investigation determined that the ancestral gastronomic traditions face a problematic factor for their permanence in relation to the current consumer products already processed; that due to its ease of preparation and obtaining affects the validity of ancestral recipes; On the other hand, for the publication of the research a digital magazine was elaborated, in which the ancestral recipes of the community are appreciated, this digital magazine is found on the website of the GAD El Tambo.
