Resumen
At present, within a globalizing, it is necessary to protect all those assets that may be considered part of the intangible cultural heritage, which will help to strengthen that sense of community identity. This research seeks to keep alive the culinary traditions from their historical reference applying research instruments such as the survey that was used to compile the information of 61 older adults of the gerontological center of canton, with an age range of 60 to 95 years, with the provided information were designed charts of statistical analyzes that specify papas con cuy with 27% and quinoa with pork soup as the main typical dishes, the Hornado with mote and tortillas de papas with 47% the Fritada with 31% were designated as the most important traditional dishes within their culture. The interview, for its part, was applied to 8 owners of establishments in which have long been inherited by their parents and even grandparents. A record of the culinary traditions of Canton Guamote as an intangible cultural heritage was elaborated. Determining the cultural diversity expressed in its inhabitants through its culture and gastronomy. With the purpose of preserving the culinary traditions and strengthening of the guamoteño identity. It is recommended to the Gobierno Autonomo Desentralizado del canton Guamote to preserve, maintain, and disseminate the cultural and gastronomic heritage of the canton, giving way to further research to safeguard and enhance our cultural identity as Ecuadorians.
