Resumen
The present ethnograhy proposes to elaboratea record of the gastronomic culture of the Canton Tisaleo like intangible cultural heritage; documenting the theoretical references and gastrnomic culture demostrating the cultural diversity, its tourist attractions,the typical and traditional gastronomy like: its drinks, utensils and used products that are part of the cultural patrimony of the place. The research is bibliographical, descriptive, non experimental and cross-secretional type that allowed us carry out a survey of information focused on the subject of study where, through the aplication of interviews with the owners of restaurants of typical and traditional food more representative of the canton, people who atended the gastronomic fair realized by the Autonomous Government(GAD) of Tisaleo;old adults and sellers in the central market who provied important information that by their year of experience know about their ancestral elaboration, with the information obtained we proceeded to inventory the typical and traditional dishes and drinks of the Tisaleo Canton with the use of the National Cultural Heritage Istitute(INPC) also produced a standard recipe for the ingredients of the preparations. To conclude this research, we proceeded to document the gastronomic culture of Tisaleo Canton by means of a magazine in which typical and traditional dishes, their ingredients and preparation are presented. It was concluded that this ethnography is intended to keep alive the traditions, customs and cultural manifestations; Making known to the Tisaleo inhabitants that they are aware of the importancee of the cultural identify that is represented in each one of them and that is being lost from generation to generation.
