Resumen
Proposal for redesign of the Tunshi dairy plant belonging to (he Superior Polytechnic School of
Chimborazo, through a preliminary evaluation of the facilities under the regulations
(RESOLUTION ARCSA 067) and taking into account the technical specifications of the
facilities: areas, equipment are defined and existing materials in the plant, the productive process
that was exccuted was identified within the plant through the description and schematization of
the production line. For the redistribution of the production area, a logistic performance indicator
was used to assess the percentage of plant space utilization, the Systematic Layout Planning (SLP)
method; with which the sequence and location of the work stations was determined, and the
Guerchet method; The total area required and the costs of the redesign were calculated and the
feasibility of the project was determined through cost-benefit analysis. 58% comply with the
requirements established by the regulations, however, the National Ageney for Regulation,
Control and Health Surveillance requires a minimum compliance of 80%, for this reason
corrective measures were established in order to comply with the requirements required, When
analyzing the cheese production process, problems were found in the operability of the cheese
production processes, the necessary area for each of the work stations was established: with which
it was possible to increase the indicator of space use in the plant of 29,1% to 94%, it is estimated
that the reference budget of the redesign is $ 11 093 that the plant will have to incur at the time
of implementation. It is concluded that the execution of the work is feasible, because the benefit-
cost ratio is greater than the unit (B / C = 1,15). Monitoring is recommended at the time of
implementation of the redesign project.
