Resumen
This research aimed to develop a “Cycle of menus based on the nutritional requirements for elderly nursing home in the city of Riobamba”. Research was descriptive and explanatory type as the qualities and properties of food used are described in the development of varied cycle menu with a gourmet touch that promotes nutrition of the elderly. Data were collected by means of a form of observation to determine the degree of compliance and established characteristics for designing menus. The record of observation was made in the area of production and in the elderly nursing home menus. According to 33 established rules and characteristics for food preparation: 40% of these were met sometimes in the nursing home, and only 10 rules are followed by 30% in full. In conducting the evaluation it was found that the menus are not meeting appropriate standards for good nutrition in the elderly, as the staff do not have sufficient knowledge for proper planning. Cycle menus with gourmet touch where considered the nutritional requirements needed by the elderly according to their special characteristics was performed. It is recommended to permanently maintain proper hygiene and a multidisciplinary work with a nutritionist in developing menus.
