Resumen
San José de Chimbo is a cantón that has a great natural and cultural wealth, that is why it is necessary to document the own traditions of this town. One of these traditions is the pilgrimage to Virgen of El Guaycowhich is current and shows union among its inhabitants, dressing, language, legends, beliefs, parties, tourist attractive places and typical and traditional food which are part of the intangible cultural heritage of the canton. It was determined by means interviews to people who live in the place by using A4 card of National Institute of Heritage and Culture (INPC) that the fritada, potatoes with guinea pig, hornado, and local-chicken soup are typical dishes of the place because of their preparation, that means that these nave a special drop where asfanesca, chiguiles, colada morada, beans, corncobs with cheese are traditional dishes which have been prepared generation after generation. We realized that there is a difference existing between typical dish and traditional dish to get an appropriate information in order to be awareness about taking to customs, traditions, methods, techniques of each preparation again to keep the cultural identity by means of cooking traditions of Chimbo canton.
