Resumen
This entrepreneurship proposes to develop a feasibility study for the opening of the artisanal bakery "VALLE HERMOSO" using quinoa flour as complementary raw material. A series of techniques, methods, and instruments used to raise the right information is used, through the application of surveys that favored a positive result since the implementation of the artisan baking service had acceptability. For developing the feasibility study, different types of studies were carried out, such as market, technical, environmental, legal, administrative, and financial study. The market study allowed to identify the unsatisfied demand of 99%, what allows determining the business phase, by means of an evaluation the main idea of the entrepreneurship is established. The technical study determines the size and the plant´s location, standard recipes, different production processes, their respective flowcharts, the design of the production letter, functions manual, design of the plant, and the various fixed assets and expenses of the production area. Through the administrative study, determines the organization, professional records, structural and functional organization charts of the company, process of recruitment and selection of personnel and their respective salaries. In the legal framework, the type of company was determined, the permits required for the operation. The financial study determines the source of financing taking into account the own capital, acquisition of bank loan, and that of certain suppliers, which will help to implement the next enterprise with a total investment of 29,324.45. The financial evaluation gave a result of the positive NPV of 28,025.57, an IRR of 45% with a recovery period in the third year, which indicates that the innovative concept is profitable and therefore the present entrepreneurship indicates a high percentage of acceptability. For maintaining this level of reliability, it is advisable to offer highly nutritious, healthy and hygienic products to our consumers.
