Resumen
This research focuses on the design of a Gastronomic Guide of the ancestral tradition of the "Pamba Mesa", celebrated in the Achupallas parish belonging to the Alausí Canton. The methodology used in this area initially takes place, by both, exploratory and observational stages, in order to get to know the group of study, which was the main point of this research. Subsequently, the fieldwork was carried out by using techniques as interviews and surveys that were conducted to the selected groups that include people whose age is around 60 and 84 years old, and constitute a repository of experiences, expertise and wisdom. This study is of qualitative type, since it is oriented to describe the main characteristics of this ancestral tradition by identifying: products, tools, methods, cooking techniques, and other elements used. The INPC records (National Institute of Cultural Heritage) were useful to develop the research in which the traditional dishes offered in this celebration were registered. After having conducted this research, it is possible to conclude that it is important to know, preserve, and spread those ancestral customs and traditions inherited from old generations, since they are an essential aspect of the cultural identity of the different Ecuadorian regions. For this reason, the “Pamba Mesa”, a gastronomic guide of the most important ancestral traditions, was created. This celebration is the scene where a series of foods is shared in community as token of appreciation to the Pacha Mama for all its benefits provided during the harvests. Finally, it is recommended to promote this gastronomic guide as a bibliographic and informative resource for both, national and foreign tourists who constantly visit this place.
