This research was conducted in the Sígsig canton in the province of Azuay, whose purpose was to evaluate the percentages of fat, non-fat solids, density, crioscopico point, proteins, lactose and salts, to determine the quality of milk in the canton. The same was done with a sample of 350 animals belonging to the seven parishes of the canton. The samples were transported with sodium citrate to the Laboratory of Life Sciences at the Polytechnic Salesian University where they were analyzed by Milkotester (seral mark).
