This study aimed to evaluate the technical-economic feasibility for the implementation of an extra virgin olive oil extraction industry in the city of Santa Maria-RS. For the study, a Minimum rate of attractiveness (TMA) of 13% pa was defined. In addition, it also seeks to obtain a return on investment within a period of 8 years. In order to obtain the results of the study, several bibliographic reviews were carried out, however, regarding the technical analysis, numerous visits to the largest industries in the branch were necessary due to the lack of literature on the subject. Data on planting and raw material management were collected, in addition to the analysis of the industrial equipment that companies use to extract extra virgin olive oil. Such facts were necessary to estimate cash flows considering risks and uncertainties and with that, estimate costs, expenses and revenues in a reliable way and thus enable the calculation of economic feasibility indicators: net present value (NPV), internal rate of return ( IRR), discounted payback. For such calculations, 3 scenarios of annual production of raw material for olive oil extraction were defined: pessimistic, realistic and optimistic. Thus, the scenario that met the research prerequisites were the realistic and optimistic scenarios.
