Caracterización microbiológica, sensorial y estimación de la durabilidad de carne de bovino con la anomalía de corte oscuro, envasada al vacío

La carne de corte oscuro, envasada al vacío, representa un grave problema para la industria cárnica, por sus características sensoriales y microbiológicas que disminuyen su vida útil. Este trabajo tuvo como objetivo, estudiar las características microbiológicas de la carne con pH normal y de corte oscuro. También se observó la variación sensorial que presentó esta carne durante su almacenamiento, a través de características de olor y color. Los bifes se separaron en base a tres rangos de pH: <5,7; 5,8-6,1 y >6,2. Estos fueron envasados al vacío y almacenados durante 28 días a 4±2 ºC. Para los análisis microbiológicos se realizaron recuentos semanales de bacterias ácido lácticas (BAL), Brochotrix thermosphacta, enterobacterias y Pseudomonas. Para evaluar las características sensoriales se hicieron paneles cada 14 días, en el tiempo 0, a los 14 y 28 días, mediante un panel constituido por 10 jueces semientrenados para los análisis de olor y 12 panelistas de iguales características para el color. Los resultados del análisis microbiológico mostraron que en la carne crecieron mayoritariamente tres microorganismos: BAL, B. thermosphacta y enterobacterias. El cuarto microorganismo en estudio, Pseudomonas, sólo se desarrolló hasta la primera semana, después de lo cual crecieron en el medio CFC otros microorganismos, lo que no permitió realizar los recuentos. En la carne de pH normal, las BAL alcanzaron recuentos máximos de Log 6,2 ufc/cm2 a los 14 días, valores que permanecieron constantes hasta el final del estudio. En el pH intermedio se alcanzó recuentos similares el día 21 y en el pH alto el día 28. En la carne de pH intermedio y alto, se vio un mayor desarrollo de B. thermosphacta y enterobacterias. Sin embargo, las BAL predominaron en la carne de pH normal, pero también crecieron en los otros dos rangos de pH, lo que inhibiendo en cierta medida un mayor desarrollo de las bacterias contaminantes. El pH de la carne envasada al vacío se mantuvo sin variaciones en los tres rangos de pH, hasta los 21 días, donde hubo un leve descenso. Sensorialmente se registraron diferencias claras en el color de la carne, entre los tres rango de pH, diferencia que se mantuvo hasta el final del estudio. Para el caso del olor, hubieron mayores diferencias entre los pH. El pH alto registró un aumento de olor desagradable a medida que transcurrió el tiempo, no así los pH normal e intermedio. Para el pH alto los jueces en el día 28 destacaron un olor “putrefacto” y “azufrado”, en cambio en los otros dos pH se detectaron olores “característicos” y en menor número “azufrados”. De este trabajo se puede concluir, que la carne de corte oscuro podría ser envasada al vacío, hasta un pH en el rango de 5,8-6,1, con una duración no mayor a 28 días, almacenada a 4 ºC. The dark cutting vacuum-packed beef represents a great problem for the meat industry, due to sensory and microbial aspects, that shorten the shelf life of this meat. The objective of this study was, to determine the microbial growth on the meat with normal pH and on dark cutting beef. Also the sensory changes of the meat during storage were observed, through changes in odor and color. Steaks in three pH ranges were tested: <5,7; 5,8-6,1 and> 6,2. These were vacuum-packed and stored during 28 days at 4±2 ºC. Weekly microbial counts of lactic acid bacteria (LAB), Brochothrix thermosphacta, enterobacteria and Pseudomonas were carried out. To evaluate the sensory changes, every 14 days taste panels were done, at times 0, 14 and 28. For the analyses of odor, a panel of 10 semi trained judges was used and the color was evaluated by 12 panelists, of equals characteristic. The microbial counts showed that in the meat three microorganisms predominated: LAB, B. thermosphacta and enterobacteria. The fourth microorganism studied, Pseudomonas, was only detected up to the first week, after that on CFC agar other bacteria developed. In the meat of normal pH, the LAB reached maximum counts of Log 6,2 cfu/cm2 after 14 days, which remained constant until the end of the study. In the intermediate pH, similar counts were reached after 21 days and at the higher pH, after 28 days. In the meat of intermediate and high pH, a higher growth of B. thermosphacta and enterobacteria was seen. The LAB prevailed in the meat of normal pH, but they also developed in the other two pH ranges, inhibiting to a certain extend, a larger development of the contaminating bacteria. The pH of the vacuum-packed meat stayed without variations in the three pH ranges, until day 21, where there was a light descent. Sensory differences were registered in the color of the meat, among the three pH range, differences that stayed constant until the end of the study. Bigger differences among the pH ranges were found for odor. The high pH registered an increase of unpleasant odors as the time passed. This did not happen at the normal and intermediate pH. For the high pH the judges after 28 days detected a “spoiled” and “sulphurous” odor. On the other hand, in the other two pH, the odors were described as “characteristics” and “sulphurous” in a small number of samples. From this work it can be concluded that the dark cutting beef could be vacuum-packed, up to a pH in the range 5,8-6,1, with a maximum duration of 28 days, when stored at 4 ºC.
