dc.description.abstractThis work is a pedagogical and conceptual construct which is based on learning based on projects as the axis of competence formation in higher education and barism as a value bet about the gastronomic culture of our country; proposal made in which it is proposed to develop competences in teamwork, collaborative work, leadership among others in a conceptual framework given from the theory referred by different authors, Strengthening organizational and teamwork capacities are part of this work. The barismo and coffee culture in Colombia are part of this construction of networks of culture, tradition and economic development which are traversed by different aspects not only technical but also human, future generations, from proposals such as learning based on projects can generate research and development as well shown in this study, creativity and gastronomic innovation, topical applications and complementarity between academia, research and development of associative work for the construction of knowledge around gastronomy, barism as part of a new culture that is closer to everyone day by day, is even shown as a trend of consumption and tendency of entrepreneurship and cultural development.
