In the following investigation meat products elaborated based on guinea pig meat were used, using it as the main protein material. It was decided to elaborate these products with this raw material since the little demand that has the consumption of this animal in Bogotá, made feasible the idea of increasing the consumption of the meat of this animal through meat products, also generating, innovation in its traditional way of preparation and presentation. The two elaborated products were meat for hamburger and chorizo, together elaborated with guinea pig meat, after having obtained these products as a base, they were applied to ten recipes of mixed minimalist type cooking, the ten preparations were: -For chorizo: posta cartagenera relleno de chorizo, chicken ballotine with chorizo, mini choripán in yogurt bread, rice valluno with chorizo, llapingachos of chorizo and Paipa cheese. -For Burger: marranitas vallunas, carimañolas with whey, Greek moussaka, mini burgers in brioche and colby cheese, cannelloni with guinea pig, mushrooms and Paipa Saravena cheese.
