Resumen
During 36 months a study was conducted in four slaughter houses to survey lesions in cattle slaughtered for human consumption. Four hundred and sixty two lesions were sampled, 22,5% of which were caused by seven different parasites: The metacestodes of Echinocccus granulosus (hydatid cysts), Fasciola hepatica, the metacestodes of Taenia saginata (Cysticercus bovis), Oesophagostomum radiatum, Eurytrema coelomaticum, Paramphistomum cervi and the protozoan Sarcocystis sp. Gross and histopathological aspects of the lesions caused by these parasites are provide in the hopes that the neophyte veterinary meat inspector can benefit from them in the task of recognition and interpretation of the significance of these lesion both to human and animal health. In the case o sarcocystosis fragments of the parasite were marked by immunohistochemistry technique using policlonal antibody to Neospora caninum. This study has resulted in the publication of two scientific papers both of which are included in the body of this Dissertation.
